RWANDA - Misozi Kopakaki is grown in the Karongi District of western Rwanda by over 800small farmers. The farmers in this area, in an effort create the best coffee possible, have pooled their coffee, resources and knowledge together by forming a cooperative they called Kopakaki. Their coffee farms are locatated at high elevations of 1500-1800 MASL, the plant varietals are African Bourbon, the mill/processing method used on this coffee is fully washed. This all produces a high quality cup with bright and clean flavor notes of lemonade, peach and black tea. 1) ROASTING COFFEE to perfection is truly an art, a distinct set of skills developed over time with experience. The most basic description of the roasting process would be that the beans need to be heated to around 400*F in about 7-12 minutes and then cooled quickly. As heat is applied the beans will change in color from green to yellow, to ever darkening shades of brown, once the roast level desired is achieved beans are cooled quickly. 2) ABOUT US - We are award-winning family operated coffee supplier.
